The kids can organize a 'plant team' to schedule watering, fertilizing, turning the pot, and measuring for growth.
Also, for healthy classroom air, I strongly recommend a small air purifier. Really keeps down the airborn illnesses, and sweetens the climate, too (especially if you teach an 8th grade class right after they've had PE.)
